HALLOUMI MANGO SALAD : Feel pretty sure I've just created my 'it' salad for the season omggggggggg… ๐ŸคคRidiculously simple – gonna impress the pants off the peeps who get to eat, namely me… right now… for dinner. ๐Ÿ˜œ Do this: ๐Ÿ‘ฉโ€๐Ÿณ Toast a handful of chopped almonds in the pan and set aside, then wipe the pan clean. Cook haloumi in pan until golden on each side. Slice up 2 mangoes. Take a handful of rocket and whatever herbs might be on hand, but rocket is so great if that's all you have. Arrange rocket, mango and haloumi on a plate. Sprinkle with toasted almonds. Season with sea salt and black pepper. Drizzle with extra virgin olive oil and maybe a tiny bit of honey if you wish ๐Ÿฅ‚ Make fancy with pretty stuff if you want to – these flowers are 'borage flowers' from my mum's garden – how cute are they! ๐Ÿ’ Be divine served with dinner like bbq fish but I think this one will take its place at the brunch table with delicious sourdough and avocado. Serves about 4 people as a side. Double chocolate thick-shake, yes or no? ๐Ÿซ๐Ÿ˜๐Ÿ‘Œ๐Ÿป โ€ข I have been on a chocolate roll of late and I am not regretting one single minute of it! I remember the days when I didnโ€™t eat chocolate for years and years. Initially this was due to intolerance but soon enough it became a fear, one that would prevent me from eating chocolate for a solid 9+ years! I remember becoming so distressed and anxious whilst being hospitalised for anorexia when they gave me chocolate pudding for dessert. I made the nurses call the dietitian and doctor looking after me to get it changed to anything other than chocolate- I was completely controlled by my anorexia and the rules I had created. I am so, so grateful that chocolate is no longer a fear for me. In fact, I donโ€™t think a day goes past where I donโ€™t eat something chocolate inspired, or flavoured! Life is way too short to live in fear and restriction. Listen to what your body is asking for and you will never feel unsatisfied or unhappy! Choose life, not illness ๐Ÿซ๐Ÿ˜˜

Morning insta world & happy Tuesday โœจ Iโ€™ve woken up super sore this morning, yesterday was pretty big for me, with the first day of the challenge & my first game back in netball… Iโ€™d forgotten how hard it all is the body ๐Ÿ˜ด๐Ÿ˜ด Wishing I could say this was my breakfast this morning but Iโ€™ll definitely be having something far simpler for this girl is tired, sore & has a full day of work today! ๐Ÿคฆ๐Ÿฝโ€โ™€๏ธ๐Ÿ˜ด Yesterday was lovely having a day off work for the first time in a while, but I certainly admit to not taking full advantage of it and giving myself a bit more of a break, ๐Ÿ˜ด back to being a busy bee until sometime next week, as long as Iโ€™m eating well & getting adequate rest Iโ€™ll be somewhat happy! ๐Ÿค— Breakfast has and always will be the most important meal of the day for me. Felt lazy, but wanted a healthy, sweet treat so made a batch of these 5- INGREDIENT FERRERO PROTEIN BALLS โœจ๐Ÿซ I used simple, wholesome ingredients and vegan chocolate protein from @whitewolfnutrition ! These keep so well in the freezer or fridge and are perfect if you are on the go or just want that sweet bite ๐Ÿ‘Œ๐Ÿผ Here is the recipe โ€”> 5- ingredient Ferrero Protein Balls Makes: 10 balls (varies depending on how big you want your protein balls to be) Ingredients: 1 1/4 cup hazelnuts (preferably roasted) + 10 whole hazelnuts 1/2 cup oats 1 1/2 cups dates (pitted & soaked to slightly soften) 3 tablespoons of cacao powder 1 scoop of vegan chocolate protein powder Method: 1.Reserve 10 hazelnuts for the centre of the protein ball and then crush 2.Into a food processor, add the rest of the hazelnuts and blitz until a fine crumb 3.Remove 1/4 cup of the hazelnut crumb and set aside 4.Add the oats, cacao powder and protein powder into the food processor and blitz until the oats become a crumb. 5.Add in the dates and process until the mixture clumps into a ball. You may need to add a bit of water if the mixture is too dry. 6.Divide the mixture into about 10 portions. Wrap a hazelnut into each portion and form it into a ball-shape. 7.Roll the balls in the hazelnut crumb. **Storage m: Store the balls in an airtight container in the fridge for a week or freezer for months! *** Handy tip when rolling: coat the palm of your hands with coconut oil to prevent the dates from sticking!
